- 1 roast pork knuckle
- 1 kg dried Chinese mushroom
- 100 gm dried oysters
- 100 gm dried scallops
- 10 gm black moss
- 20 gm salt
- 30 gm rock sugar cube
Procedure:
- rinse dried oyster and scallop ... cut into smaller pieces if you want to ...
- rinse and soak mushroom till soft ... cut off stem ... strain soaking water ...
- add dried oysters, scallops, mushroom and soaking water into a large pot ... add more water to cover the mushroom ... bring to a boil ...
- add roast pork knuckle ... bring to a boil and simmer till mushroom is soft ... pork meat falls off the bone ...
- take out the pork knuckle and shred it ... add the shredded pork and bone back into the pot ...
- add salt and rock sugar to the pork ...
- soak black moss in water till soft ... strain and soak in hot water ... strain and add to pot ...
- bring to a boil ... this dish take a few hours of simmering ... its done when the mushroom is soft ...
Note:
- this dish is my family favourite dish during the lunar new year ... I don't have the recipe from my late father-in-law ... after many attempts, this recipe is the best and I putting it on my blog for my children future use ...
- you may replace pork knuckle with roast pork
