- 20 dried Chinese mushrooms
- 500 ml chicken stock
- 5 dried scallops
- 500 gm green vegetable (green leafy / broccoli)
- 1/2 tsp dark soy sauce
- 10 small cubes rock sugar
- 2 tsp cornstarch mixed with water
Procedures:
- rinse and soak mushrooms in hot water till soft ... reserved soaking water for use ... remove stem and set aside
- rinse and soak scallop in hot water till soft ... reserved soaking water for later use ...
- in a pot add add chicken stock, reserved water, mushroom, scallops ... bring to a boil, simmer till soft ... add water if almost dry ...
- add dark soy sauce, rock sugar, simmer ... ticken sauce with corn starch mixture ...
- blanch green vegetable with boiling water with a little oil added into the water ... set aside
- serve vegetable with mushroom and sauce nicely arrange in a serving plate ...
