Ka Chang Ma Chicken
Ingredients:
- whole chicken / drumlets / mid wings
- 4" ginger
- 1 tbsp. sesame oil
- 2 cups Chinese wine
- 4 tbsp. ka chang ma
Procedure:
- pound till fine and fry ka chang ma til dry and fragrant ...
- pound ginger ... squeeze out juice
- fry ginger till dry ... set aside
- fry chicken with sesame oil
- add Chinese wine ... fry till chicken cook
- transfer to double boiler
- add ka chang ma, ginger juice, Chinese wine
- cook for 1 hour
- serve hot
