- 4 eggs (optional)
- 8 dried Chinese mushrooms
- 500g pork belly
- 3 tbsp dark soy sauce
- 1 lit water
- 1 cinnamon stick
- 1 star anise
- 4 cloves
- 4 small pieces rock sugar
- 0.5 tsp Chinese five spice powder
- 2 garlic bulb, separate cloves
- to taste ground white pepper
- to taste salt
Procedure:
- Cooked hard boiled eggs peel when cool enough to handle. Set aside.
- Soak dry mushrooms in hot water till soft, drain water. trim away stems. Set aside.
- In a pot or wok brown pork belly on both sides on medium heat. Add half of the dark soy over the meat on one side, flip over, and drizzle the remaining dark soy over the other side of the meat.
- Add water, mushroom, cinnamom stick, star anise, clove, sugar, five spice powder, garlic
- Bring to a boil, then lower heat to simmer for an hour.
- Check braising sauce not dried out add more water
- Add hard boiled eggs Taste and season to taste with salt, pepper simmer another 15 mins
