- 1 large goeduck clam
- Tom Yam Soup
- bring a pot of water to boil .. enough to cover goeduck clam
- prepare a bowl of ice cold water ... enough to cover goeduck
- give goeduck clam a wash and rinse
- blanch goeduck in hot boiling water
- remove and place in cold water bath
- remove geoduck shell ... which should come off easily
- remove geoduck skin ... which should also come off easily
- remove geoduck stomach form the body
- cut off geoduck body from the siphon (trunk)
- slice geocduck siphon (trunk) into halves
- rinse geoduck body, siphon (trunk) halves, chopping board, knife before slicing
- thinly slice geoduck siphon (trunk) and body
- use according to choosen recipe
